Great masala chai depends on three things: strong CTC tea, freshly crushed spices and boiling in the right order.

For 2 cups

  • 1 cup water and 1 cup milk
  • 2 heaped tsp Assam CTC or Masala Chai
  • 2 crushed green cardamom, a small piece of ginger
  • Sugar or jaggery to taste

Method

  1. Boil the water with ginger and cardamom for 2 minutes.
  2. Add the tea and boil for 1 more minute until deep red.
  3. Pour in the milk and bring to a rolling boil twice.
  4. Add sugar, simmer 30 seconds, strain and serve.

Want it stronger? Add the tea before the spices and let it boil longer instead of adding more leaf.
